View Full Version : Anybody know how to make good bbq ribs w/out a smoker?
I've seen on TV and read in Sonny's BBQ menus that using a smoker for a long period of time is what gives bbq ribs that "meat falls off the bone" quality. But I don't own a smoker, and was wondering if anyone knows a procedure or recipe that does the "softening" using an oven, or via some other means.
Ribs seem elite and complicated. My experience of BBQ is limited to throwing steaks on the grill until cooked to medium.

Put the ribs in a slowcooker with a mess of BBQ sauce for most of the day, then finish them on the grill. Puting some kind of smoke chips in foil on the coals helps to give the smoked flavor too.

I've been looked at that method while doing a little research online. I might try it when I got visit my parents during Thanksgiving, because my mom's got a slow cooker.
Do you boil the ribs first before slow cooking? Any particular sauce that you'd recommend?

No boil, just throw them in the slowcooker with the BBQ sauce and let them cook that way for the better part of a day. When I do this, I use just a basic/cheap BBQ sauce in the cooker, then a little bit of good sauce on the grill. Basicly, all the cooking is done in the slow cooker. Just a quick finish on the grill, and this is a great way to do ribs for a large group of people.

Boiling is a way to cheat, to get the fall off the bone results...
A dryer duct, two medal boxes a habochi, and a 40+ cfm computer fan and you have a smoker... PM me if you want more instructions...
Next: In cheese cloth wrap in baccon fat, or fatty baccon and your choice of seasoning combo.. If you don't want to choose, pick a complex fajatia seasoning.... Finish on HOT charcol or a hardwood flame..

the the best way to cook ribs with out a smoker is in your oven by braising the ribs. start by giving your ribs a nice dry rub (kosher salt, brown sugar & what ever your favorite spices are) & let that sit in the fridge over night. set your oven to 250 degrees. then in a roasting pan add some white wine, smashed garlic, apple cider vinegar, honey, & worshcestier(sp). add the ribs cover that with tin foil really tight. put that in your oven for 2 1/2 hours. that will be enough time for that collagene to break down. then remove the ribs & use the liquid that you braised the ribs in to make your sauce. put that in a pot & reduce by half. then slather that on your ribs & slap them under the broiler or the bbq til the get brown. you can rep me after you try them. if you want actual measurements let me know. enjoy

i broil mine till brown on both sides then i drain the fat then i put bbq sauce on both sides and put back in the oven and bake at 300 for about 2 1/2 - 3 hr's (sauce i use 1 bottle of bbq sauce any kind , 1 packet of shake 'n' bake bbq and 3/4 cup of honey)

no need to parboil. put ribs on foil, pour some bourbon or whiskey on em and let em sit for 15 minutes or so, soaking. mix brown sugar, paprika, salt, dry mustard, cumin and corriander and rub all over ribs. wrap them in the foil and put in a 350 oven for two or so hours, take off top of foil, put oven on broil and crisp up the top.
tender, juicy, and tasty as hell.
