Just made this for the first time tonight and it was delicious!
1-2 lb beef chuck roast
1 packet taco seasoning
1 c. beef broth
1 small can Rotel diced tomatoes with green chiles
Cook roast in water in slow cooker (use slow cooker instructions). The best way to do this is to cook roast the night before, and refriedgerate. If you don't have a slow cooker, you can cook the roast in a pan submerged in water at 325.
After taking fat off meat, shred the beef. Place the shredded beef into a pan on the stovetop with the beef broth and tomatoes. Let it come to a boil. Add the taco seasoning and simmer on low with the lid on for an hour. Stir occasionaly. Take lid off and let some of the water cook out, about another 15 minutes.
Serve in tacos or as a burrito with your favorite toppings!
