Coconut Meringue Slices

Serving suggestion 12

Ingredients:

75g (3 oz) Margarine
100g (4 oz) Caster Sugar
2 medium egg yolks
2 x 15 ml spoon (2 tbsp) milk
few drops of vanilla essence
175g (6 oz) Self Raising Flour
Pinch of salt

Topping:

2 medium Egg Whites
100g (4 oz) Caster Sugar
50g (2 oz) desiccated coconut
Chopped cherries or nuts sprinkled on top.

How to make:

1. Heat oven to 160c (325F or gas mark 3). Grean and line a tin 28 x 18 cm (11 x 7 inch) whatever size you wish just add more ingredients.

2. Cream margarine and sugar, beats in egg yolks, milk and essence

3. Fold in flour and the salk and spread in the tin.

4. Beat the egg whites stiffly, fold in sugar and coconut.

5. Spread mixture over base and sprinkle with cherries and nuts.

6. Bake for 45 minutes (or until looks done). Cut into slices when cool.
