Spiced Chicken Over Spinach
For Chicken:
* 2-4 Tbsp olive or canola oil
* 2 tbsp cider vinegar
* 2 crushed garlic cloves
* 2 tsp dried thyme
* 1 tsp dried oregano
* 1 tsp cayenne pepper
* 1/2 tsp salt
* 1/4 tsp pepper
* 4 boneless/skinless chicken breast halves
For Spinach:
* 1 bunch green onions, finely chopped
* 1-2 crushed garlic cloves
* 1-2 tbsp olive or canola oil
* 1/2 lb fresh mushrooms, sliced
* 1 package (10 oz) fresh spinach
Preheat oven to 375 degrees. Combine all ingredients (except for chicken) for the chicken in a bowl and mix well. Spoon over chicken and bake until done. In a large skillet, saute the onion and garlic in oil for a minute. Stir in the mushrooms; saute for 3-4 min until tender. Add spinach and saute until spinach leaves are wilted. Transfer to a plate, top with chicken
